Les Parcellaires de Salux


Les Parcellaires de Saulx is a haute-couture wine company located in Meursault which was created in September 2017 on the foundations of a century-old house of wine located in the same premises.

 

It enjoys a privileged location with an outstanding view over the vineyards of Meursault and Puligny-Montrachet, as it is located at the end of the first of these villages without any building in front of the view.

 

In addition, it can be proud of its beautiful and extensive historic cellars of more than 1500 square metres, which ensure that wines are produced, aged and stored in perfect conditions.

 

Les Parcellaires de Saulx sells around 30 appellations produced on the most prestigious terroirs of Burgundy, from Côte de Beaune to Côte de Nuits, from village appellations to grands crus.



It vinifies and ages the musts or wines acquired from its winegrower partners with the deepest respect for their work and for the Terroir by paying particular attention to their selection and more specifically by seeking out winegrowers who use organic or biodynamic practices to farm their vineyards.

 

The specificity of Les Parcellaires de Saulx is based on not blending any wines that come from different sources, so each wine comes only from a vineyard belonging to a single winegrower and very often comes only from one of their plots, to respect the authenticity of the terroir, the work of the winegrower and the diversity of the Burgundian Climats.

 

The aim of the vinification and the ageing practices is to support and develop the wines without giving them any overriding style, in the same spirit as those which guides it in the choice of its partners.

 

The first vintage was 2015 for some premiers crus and grands crus appellations and 2016 for village appellations and other premiers and grands crus appellations.

 

Since de beginning of the year 2023, Les Parcellaires de Saulx farms a plot of vineyards located in Meursault "Le Pré de Manche" in order to put down its winegrowing roots in its Terroir.

 

This Climat isn't well known and is undervalued. Its soil with stone, sloped in the south gives a very high quality wine with a nervous, dry and elegant style that could evoke the tension and the form of "Les Perrières", without having all its plenitude.
